Glossy Greens with lemon, chilli and honey

Transforms greens into a taste explosion! I can eat this on toast, or maybe with bacon, but usually as the veg to a meal.

This is exactly as I make it but exchange or add as you like….

Ingredients (in order of appearance!)

  • 400g kale, spring greens or any combination
  • 1 small onion
  • 3 cloves garlic
  • Knob of butter
  • Generous glug of olive oil
  • ½ teaspoon Lazy Chilli
  • Ground black pepper (generous)
  • Maldon sea salt (small pinch)
  • 1 teaspoon Marigold Bouillion Powder
  • Juice of ½ lemon
  • Splash of hot water
  • ½ teaspoon runny honey

Method

Strip the greens off their midribs and chop fairly well.

Slice the onion into rings.

Finely slice the garlic.

Put the butter and oil in the pan to heat. When hot, fry the onion till it just begins to brown at the edges.

Add the garlic and stir for 30 seconds or so till turning golden but DO NOT BURN!

Add the greens and mix well until all is coated and glossy. Add salt, pepper and chilli and mix again. Reduce the heat a little and cook about 5 mins – the greens will shrink to less than half their raw bulk.

Stir in the Bouillion Powder, add the lemon juice and a splash of hot water. Bring up to a bubble, cover and cook on medium to low heat for 8 – 10 min. The liquid should almost disappear leaving moist, glossy greens.

Add the honey, stir and serve.
